COTTO Seeded Sourdough
A naturally leavened sourdough, generously packed with white and black sesame seeds, linseeds, sunflower seeds, and pumpkin seeds. Slow fermentation brings depth of flavour, while the seeds add texture, crunch, and nourishment in every slice.

Our signature sourdough with a bold twist. Naturally leavened and slowly fermented, this loaf is folded with jalapeños for gentle heat and pockets of sharp cheddar that melt into the crumb. Balanced, savoury, and full of character.

About Darek – The Heart Behind COTTO
A passion for the kitchen
From the very beginning, my heart has always been in the kitchen. I completed a Master’s degree in Hospitality and spent years honing my skills on luxury cruise ships, in fine dining, and later in global automotive sales. Along the way, I’ve been lucky enough to travel to over 80 countries, experiencing diverse cuisines and cultures that shaped my love for good, honest food and a healthy lifestyle.
From Poland to Australia
Originally from Poland, I moved to Australia over 12 years ago. Over time, I realised that I couldn’t find a sourdough bread that truly matched my taste, so I decided to make my own. What started as a personal pursuit grew into a love affair with gut-friendly, naturally fermented sourdough. For over six years, I baked for friends, refined my craft, and discovered the joy of sharing bread with my community.
Following my passion to WA
After recently moving from Queensland to Western Australia, I knew it was time to follow my passion fully — and that’s when I decided to open COTTO Sourdough Bakery.
Baking for the community
Today, I’m proud to offer freshly baked loaves to your door and soon, to your favourite local grocery shop. Every loaf I bake reflects the care, patience, and love I’ve poured into this craft. Most of our products are organic, though we are not a certified organic bakery. We are free from any chemicals, improvers or additives.

How often do we bake?
COTTO Micro Bakery bakes once a week and delivers fresh sourdough to your door every Saturday morning — the perfect way to start your weekend.
How far in advance should I place the order?
Orders are open online until 10 pm every Wednesday.
Our sourdough takes on average 36 hours to ferment, and we bake in small batches.
To make sure you don’t miss out, we suggest ordering a little earlier — and perhaps adding an extra loaf or two to enjoy throughout the week.
Are we available in retail shops?
Not just yet, but we are looking into it in the near future
We deliver within a 15 km radius of Port Kennedy (6172) — including nearby suburbs like Warnbro, Waikiki, Baldivis, Secret Harbour, Golden Bay, Safety Bay and Rockingham. If you’re just outside this area and unsure, feel free to reach out and we’ll check for you!
